What You’ll Need:
1 white onion, diced
1 lb. ex-lean ground turkey
1 (15 oz.) can diced tomatoes, low sodium
3 Tbsp. tomato paste
3 Tbsp. Italian spices
1 tsp. salt
½ tsp. pepper
2 cloves garlic, crushed
1 c. zucchini, sliced
1 head broccoli,
½ c. low moisture,
non-fat mozzarella cheese
2 c. Greek yogurt
In large skillet, heat 1 Tbsp EVOO and add diced onions. Saute until softened. Add ground turkey, canned tomatoes, and tomato paste, spices, salt, pepper, and crushed garlic. Continue to cook all ingredients until turkey is cooked. Set aside when done.
In medium bowl, combine cheese, Greek yogurt, broccoli, and egg.
Preheat oven to 375°. Lightly grease the bottom of 13x9 baking dish. Place layer of zucchini rounds evenly across bottom.
Add layer of turkey mix and then a layer of broccoli mix. Continue until ingredients are gone.
Bake 45-60 minutes. Remove from oven and allow to cool 10 minutes before serving.
