Roasted Tomato Basil Soup

Serves: 4

What You’ll Need:

  • 2 c. cherry tomatoes

  • 3 tbsp. olive oil

  • 1 tsp. salt and pepper

  • 2 garlic cloves, minced

  • ½ yellow onion, diced

  • 3 c. chicken broth

  • 1 (28 oz) can diced tomatoes

  • 1 tsp. garlic salt

  • 1 tsp. garlic powder

  • ½ tsp. black pepper

  • 1 tbsp. fresh basil, chopped

How to:

  • Preheat oven to 400 degrees. Place cherry tomatoes on baking sheet, pour

  • 1 ½ tbsp. olive oil over top, along with salt and pepper. Roast tomatoes for 15-20 minutes.

  • In large pot, drizzle olive oil and heat to medium-high. Add garlic and onion. Saute 4-6 minutes. Add roasted tomatoes, chicken broth, canned tomatoes with juice, garlic salt, garlic powder, pepper, and basil.

  • Bring soup to soil, then simmer for

  • 20 minutes, partially covered.

  • Use emersion blender to blend soup to desired consistency. Serve.
